Grapes are hand-harvested and left in drying rooms from the end of October until the beginning of March. The 'raisined' grapes are more concentrated and produce a rich, full-flavoured juice. The wine is then aged in small oak casks for a period of two years to mature. Intense and full-bodied, it shows cherry, raisin and spicy notes on a rich and weighty palate.
